We're a USDA inspected meat processing plant. We buy locally raised whole animals and use seam butchery techniques. We specialize in sausage production and make products for Michael Symon's Mabel's BBQ restaurant as well as his Goldbelly line. We produce salamis, snack sticks, bacon and ham that are free of nitrates, celery powder and encapsulated citric acid.
