A USDA inspected traditional meat processing house. We are the only Charcuterie House in the Catskill Mountains and we offer value added processing to our local farm community, as well as wholesale to restaurants. We source from these farmers for our own line of products. Please stop by the retail location to try our wide selection of stuffed, cured, fermented, and smoked meat products as well as wild foraged mushrooms and other local delicacies.
