As a non-USDA butcher shop we process wild game and domestic animals by appointment only. We have a walk in cooler and insurance. From June-August, we are only open for emergency animals. From Sept -April we are open for all animals. November is mostly wild game. Our refrigeration temps are maintained during the entire process. Meat is cryo vacuum packaged and flash frozen, and all orders are packed in large paper bags for convenience. We charge by hanging weight. We do slaughter pigs, but right now that is it. Other animals need to come to us ready for the cooler. Beef, pork, ostrich, bison, deer, bear, moose and lamb. We also cure, smoke, and slice. natural casings and sausage. We reserve the right to refuse service at any time.
